Fields added to tables using Metadata do not have default values.
SQL can modify these fields, but you will need to trigger that from your application (e.g. on mimic, in Logic or in ODBC).
Depending on what you're actually using the Custom Field for.. do you need to use it?
If you just want to display a value to an operator, then you could just use an animation to display this value.
If you want to store a value dynamically, then Logic might be the best approach. You could trigger it either periodically, or based on some event that you know of (i.e. a mimic script, or tag change or similar).
