Is it possible to deploy a Cooling Optimize solution using netbotz temperature sensors?

Yes, Netbotz sensors are compatible with Cooling Optimize. However, it isn't as straight forward as using the Vigilent wireless sensors.
In order to integrate Netbotz sensors (or any other supported 3rd party sensor) into the AI engine of Cooling Optimize, you need to convert the sensors to BACnet IP and the use the AI engines BMS integration feature. You could use a Field Server or other protocol converter to convert the netbotz sensors from SNMP or Modbus to BACnet IP. You also need Vigilent to turn on the BMS integration feature during install.
From what I've heard, their may be an option to integrate via Modbus TCP in the future, but I don't when that will be available.

Is this any possibility to do a indirect connexion by using DCE to centralize sensors data and send to AIE, instead of converting sensors to BACnet and communicate directly?

Yes you can use DCE to centralize the data, but you would have to use the DCE building management license to convert all the points to modbus TCP. However, you would still need to use a field server (or similar protocol converter) to convert the points to BACnet IP to integrate into the AIE.
The only other way to use DCE to centralize the data would be to use it's web api, but the AIE doesn't support 3rd party sensor integration via a web api.
In my experience, it is much easier to just deploy the Vigilent wireless sensors and gateways. The wireless sensors only need to be on every 3-5 racks.
